Foodie Friday #12 + Bikini Friendly Eats


Have you missed me?? I have been a bit MIA lately due to the aforementioned craziness in my life. I PROMISE to be back to my normal schedule next week but in the meantime lets party! Summer is now here and I am definitely not in bathing suit wearin' shape...far from it, in fact!

This week I decided it was time to start getting back into shape which is so much easier to say than do. So so much easier to say...especially when tempted by last weeks link ups! I mean, did you guys know I was going to start a major sweets detox? Seriously!! In honor of the bikini donning countdown (I feel like Kirstie Alley the night before her Oprah appearance!) I am featuring swimsuit friendly eats this week. Trust me, your thighs will thank me...



Healthy Fish Sticks from A Little Nosh are a great way to get lots of protein with little fat. You may ask how I plan to bake these bad boys with my no oven rule in the summer -no worries, folks, I have it under control! I take my Cuisinart Convection/Toaster Oven (Also Mentioned HERE) outside!! I did this yesterday with a pizza and I was able to bake without heating up our already hot house. The temp outside is 104 degrees for cryin' out load!


These little babies pack a pick me up punch! Everything Reconsidered linked up some Homemade Energy Bars/Balls that are perfect to crush your mid day slump. Not only are these healthy but they are also much cheaper than store bought energy bars which, as you know, is a HUGE plus in my book!


KB and Whitesnakes Home hit the nail on the head with this Pasta and Bean Salad. The beans will keep you feeling full and the lemon zest will wake up your senses and revive your brain power...seriously - it has been proven! To make this lower in fat you can omit the prosciutto and goat cheese or maybe just one of the two...no need to get crazy with the calorie cutting! I don't eat meat and I am partial to feta so those would be my two little tweaks but my hubs would love it just the way it is!

Need some meat to go with your meal? Check out this super simple 2 ingredient Applesauce Chicken from Talking Dollars and Cents...did you guess the 2 ingredients?? Not only is this recipe easy and quick but it is made with items most of us already have in our home! No added fat makes it healthy and the sweetness of the applesauce makes it delicious!


Doesn't this look yummy and festive? All the bright colors make this Barley Salad with Feta and Shrimp from Hungry Homebody the big winner of the week for me. I plan to make this for my Grandmas Birthday party next week - I was told to bring a salad and this one will be sure to please!! It is fresh, cold, and full of fiber and protein. Did you know eating healthy could taste so good?
